If grilling, try this recipe using a pre-soaked cedar board - insanely delicious! Just don't overcook it. 135 degrees internal temp is perfect!
Use this recipe for the fresh paneer. Cool and slice into 1/2 inch rectangular pieces. Blend 2 packets of Moji's Palak (spinach) Masala in a quarter cup of olive oil. Coat the paneer with the spiced oil and shallow fry in vegetable oil until well browned on each side.
Warning: fresh paneer is so good as is you may snack your way through it before marinating!
