Summer Fare, Moji-Style Indian Food Recipes

It's already sweltering in many parts of the country and that's a good sign it's time to make some menu adjustments to keep your Indian meals light and bright yet still authentic and flavorful. As such we have added some classic Indian food recipes. In Moji's family, when the weather warmed up, she moved away from curries and toned down the chili, opting for a fresh mint or cilantro chutney condiment instead. From skewered chicken tikka and marinated salmon to flash-fried fresh paneer, the options are endless. And you can pair with a variety of sides including cous cous, wild rice, pasta salad or light summer greens. And best of all, it's super easy to scale up for bigger outdoor gatherings!


Here is a fabulous summer menu to explore using a variety of Moji's blends!


Tandoori Chicken Skewers

Use Moji's Tandoori-Style Chicken Recipe using boneless, skinless thighs and cut into small pieces (tikka) that can be skewered and grilled or baked.


Garam Masala Seekh Kebabs:

This recipe is a serious crowd pleaser!


Marinated Salmon:

If grilling, try this recipe using a pre-soaked cedar board - insanely delicious! Just don't overcook it. 135 degrees internal temp is perfect!



Marinated Paneer:

Use this recipe for fresh paneer. Cool and slice into 1/2 inch rectangular pieces. Blend 2 packets of Moji's Palak (spinach) Masala in a quarter cup of olive oil. Coat the paneer with the spiced oil and shallow fry in vegetable oil until well browned on each side.

Warning: fresh paneer is so good as is you may snack your way through it before marinating!

Vegan Option: Use extra firm tofu



Sweet Masala Chai:

If you want to finish the meal off old-school make a small pot of this decadent chai using Moji's Sweet Masala.
