What Is Palak Masala?

Palak is the Hindi word for spinach, and Palak Masala is the spice blend used to create India’s beloved spinach-based curries — most famously Palak Paneer. This dish is one of the most popular vegetarian curries in North Indian cooking, made by blending cooked spinach with warming spices and simmering it into a rich, vibrant green sauce.

This blend works beautifully with paneer (Indian cottage cheese), tofu for a vegan version, chickpeas for a heartier dish, or simply as a pure spinach curry. One packet makes one complete dish for 3–5 people.

How to Make Palak with moji masala®

  1. Wash 1 lb of fresh baby spinach and blanch briefly in boiling water for 1–2 minutes. Drain and blend into a smooth purée using a blender or food processor. Set aside.
  2. Heat 1 tablespoon of olive oil in a wide pan over medium heat. Add 3 chopped garlic cloves and sauté for 1–2 minutes until golden. Add the entire moji masala® Palak Masala packet and stir for 60 seconds to bloom the spices.
  3. Add the spinach purée and ½ teaspoon of salt. Stir well to combine with the spiced base. Add a splash of water if the mixture is too thick.
  4. Simmer on medium-low heat for 8–10 minutes, stirring occasionally, until the curry is fragrant and the flavours have melded together. If adding paneer or tofu, fold in diced cubes now and simmer for a further 3–5 minutes.
  5. Finish with a squeeze of lemon juice and serve hot with basmati rice, naan, or roti.

Total cooking time: approximately 30 minutes.

Can I make this vegan?
Yes — the base recipe is completely vegan. Simply omit the paneer or swap it for firm tofu or cooked chickpeas. The spice blend works equally well in all versions.

Is Palak Masala spicy?
Palak Masala is mild and family-friendly. The blend is designed to highlight the natural sweetness of the spinach with aromatic warmth rather than heat. If you prefer more spice, add a chopped chili with the garlic in step two.
