Why This Method Works
Traditional rice cooking requires precise water ratios. This method skips all that — you boil the rice in excess water (like pasta), then drain off the starchy water. The result is lighter, fluffier, and less filling than absorption-method rice. It's how many South Asian families actually cook rice at home when they want a lighter meal.
The Method
- Rinse rice under cold water 3 times until water runs clear
- Boil a large pot of water — more than you think you need. Add salt.
- Add rice. Boil uncovered for 6-8 minutes. Test a grain — it should be just tender, not mushy.
- Drain immediately through a fine strainer. The starchy water goes down the drain.
- Return rice to pot. Place a clean kitchen towel over the pot, then put the lid on top. The towel absorbs steam and prevents condensation from dripping back onto the rice.
- Let it steam on the lowest possible heat for 5 minutes. Turn off heat.
- Fluff gently with a fork. Never use a spoon — it crushes the grains.
