How to Make Kitchari with moji masala®

  1. Rinse ½ cup of basmati rice and ½ cup of split mung beans thoroughly until the water runs clear. Soak together for 15–30 minutes if time allows — this helps with cooking and digestion.
  2. Heat 1 tablespoon of ghee or vegetable oil in a medium saucepan over medium heat. Add the entire moji masala® Kitchari Masala packet and stir for 60 seconds to bloom the spices in the oil.
  3. Add the drained rice and mung beans and stir to coat evenly in the spiced oil. Add 1 teaspoon of salt and 3 cups of water (3½ cups for a soupier consistency).
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until the rice and lentils are fully soft and have merged into a creamy, porridge-like consistency. Add vegetables of your choice in the last 10 minutes if desired.
  5. Stir gently and taste for salt. Serve warm with a squeeze of lemon juice and a drizzle of ghee on top if desired.
