I selected the kitchari masala spice blend and then didn't know what to do with it. I didn't have split mung beans, but I did have some chana dal, so I made it with those. I followed the directions and it turned out delicious. (chana dal cooks superfast though. How to Make Kitchari with moji masala®
- Rinse ½ cup of basmati rice and ½ cup of split mung beans thoroughly until the water runs clear. Soak together for 15–30 minutes if time allows — this helps with cooking and digestion.
- Heat 1 tablespoon of ghee or vegetable oil in a medium saucepan over medium heat. Add the entire moji masala® Kitchari Masala packet and stir for 60 seconds to bloom the spices in the oil.
- Add the drained rice and mung beans and stir to coat evenly in the spiced oil. Add 1 teaspoon of salt and 3 cups of water (3½ cups for a soupier consistency).
- Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until the rice and lentils are fully soft and have merged into a creamy, porridge-like consistency. Add vegetables of your choice in the last 10 minutes if desired.
- Stir gently and taste for salt. Serve warm with a squeeze of lemon juice and a drizzle of ghee on top if desired.
