Why Leftover Curry Makes the Best Biryani

Traditional biryani is time-consuming because you have to marinate meat, cook it in spices, par-cook rice, then layer and steam everything together. But if you already have leftover Rogan Josh (or any meat curry), the meat is already perfectly spiced and tender. You just need to layer it with rice and let the magic happen.

Ingredients

  • 2 cups leftover Rogan Josh (meat + sauce)
  • 2 cups basmati rice
  • 1 tsp Kashmiri Garam Masala
  • A pinch of saffron soaked in 2 tbsp warm milk
  • 2 tbsp ghee or butter
  • Fresh cilantro and fried onions for topping

Step-by-Step

  1. Par-cook rice: Boil basmati rice in salted water for 6-7 minutes until 70% cooked (still firm in the center). Drain.
  2. Layer: In a heavy pot, spread the leftover Rogan Josh on the bottom. Cover with a layer of par-cooked rice.
  3. Season the top: Drizzle saffron milk over the rice. Sprinkle Kashmiri Garam Masala. Dot with ghee.
  4. Seal and steam: Cover the pot tightly — use foil under the lid for a better seal. Cook on the lowest possible heat for 20-25 minutes.
  5. Rest: Turn off heat. Don't open the lid. Let it sit for 5 minutes.
  6. Serve: Gently scoop from bottom to top so each serving has rice and meat. Top with fresh cilantro and crispy fried onions.

Tips

  • The seal matters: A tight seal traps steam, which is what cooks the rice through and creates the aromatic layers
  • Don't stir: The layers are the point — scooping from bottom to top gives each plate both rice and curry
  • Works with any curry: Try it with leftover Chicken Curry or Mushroom Masala too
  • Crispy bottom (tahdig): If you add an extra tbsp of ghee to the bottom layer, you'll get a golden crispy rice crust
