How to Cook Baingan Masala

Ingredients

  • 2 medium eggplants (Italian or globe)
  • 1 medium onion, finely diced
  • 2 tomatoes, chopped
  • 2 tbsp cooking oil
  • Fresh cilantro for garnish

Baingan Bharta Method (traditional)

  1. Roast the eggplant: Place whole eggplant directly on a gas flame or under the broiler. Turn every few minutes until the skin is completely charred and the flesh is soft (about 15 minutes). This is where the smoky flavor comes from.
  2. Peel and mash: Let cool slightly, peel off the charred skin, and mash the flesh with a fork. Don't purée it — you want texture.
  3. Build the base: Heat oil, sauté onions until golden. Add the moji masala® packet and stir 30 seconds.
  4. Add tomatoes: Cook until soft, about 4 minutes.
  5. Combine: Add the mashed eggplant. Mix well and simmer 15 minutes.

Quick Sauté Method

  1. Cube the eggplant (don't roast). Sauté in oil until golden.
