What Is Aloo Rasedar?

Aloo Rasedar (literally "potatoes with gravy") is a traditional Kashmiri comfort food — tender potatoes simmered in a thin, aromatic yogurt-based sauce. It's lighter than most Indian curries, mildly spiced, and the kind of dish that Indian families make when they want something simple, warming, and satisfying.

It's also one of the most beginner-friendly Indian dishes — almost impossible to mess up, and kids love it.

How to Cook Aloo Rasedar

Ingredients

  • 1 packet moji masala® Aloo Rasedar Masala
  • 4–5 medium potatoes, peeled and quartered
  • ¼ cup plain yogurt
  • 2 tbsp cooking oil or ghee
  • 1 cup water
  • Fresh cilantro for garnish

Step-by-Step

  1. Heat oil: In a heavy pot, heat oil or ghee over medium heat.
  2. Add spices: Add the moji masala® Aloo Rasedar packet directly to the oil. Stir 30 seconds — the spices will sizzle and bloom.
  3. Add yogurt: Stir in yogurt one tablespoon at a time, mixing continuously.
  4. Add potatoes: Add potato quarters and stir to coat in the spiced yogurt.
  5. Add water: Pour in 1 cup water. Bring to a boil, then reduce to a simmer.
  6. Cook: Cover and simmer for 25–30 minutes until potatoes are fork-tender and the sauce has thickened slightly.

Serve with steamed rice or puri (fried bread). The thin, flavorful gravy is meant for spooning over rice.

Flavor Profile

Mild, warming, and aromatic — the gentlest of all moji masala® blends. Fennel and dry ginger give it a distinctly Kashmiri character. Zero heat, maximum comfort.

Tips and Variations

  • Don't overcook: You want the potatoes tender but holding their shape, not mushy
  • Make it vegan: Use coconut yogurt instead of dairy
  • Add peas: Frozen peas in the last 5 minutes make it a more complete meal
  • Leftovers: Stuff into a warm paratha for next-day lunch

Why Choose moji masala® Aloo Rasedar Masala?

This is the dish that started in moji's (Shireen's mother's) kitchen in Kashmir. It's the first recipe Shireen learned to cook, and it's the gentlest introduction to Indian flavors. Gluten-free, no fillers, no MSG.
