Perfect rice for Indian food comes down to three things: rinse thoroughly, use the right ratio, and never skip the resting step. Here's every technique you need.

The 5 Rules of Indian Rice
- Always use basmati. Long-grain basmati is non-negotiable for Indian cooking. Jasmine, arborio, and regular long-grain rice have the wrong texture and aroma.
- Rinse until clear. Wash rice in cold water 3-4 times. The cloudy water is surface starch — if you don't rinse it off, your rice will be gummy.
- Soak for 20 minutes (optional but worth it). Soaking hydrates the grain evenly, which means it cooks more uniformly and each grain elongates to its maximum length.
- Don't lift the lid. Once you reduce to a simmer, the steam trapped inside does the cooking. Every time you lift the lid, you release steam and extend cooking time.
- Rest before fluffing. After cooking, let the rice sit covered for 5 minutes off the heat. This redistributes moisture so the bottom isn't wet and the top isn't dry.
The Towel Trick
This is the technique Indian grandmothers use that most Western recipes skip: after cooking, place a clean kitchen towel between the pot and the lid during the resting phase. The towel absorbs steam that would otherwise condense on the lid and drip back onto the rice, making it soggy. It's the difference between good rice and restaurant-quality rice.
Ratios That Work
- Stovetop absorption: 1 cup rice : 1.5 cups water
- Rice cooker: 1 cup rice : 1.25 cups water (rice cookers trap more steam)
- Boil-and-drain: Excess water (like pasta) — no measuring needed
Flavor Additions
For plain rice to serve with curry, keep it simple — just salt and maybe a bay leaf. But for special occasions:
- Jeera rice: Toast 1 tsp cumin seeds in ghee before adding rice and water
- Saffron rice: Soak a pinch of saffron in 2 tbsp warm milk, stir in after cooking
