Gosht Masala: Authentic Kashmiri Meat Curry Recipe

Gosht masala is a traditional Kashmiri slow-cooked meat curry — rich, aromatic, and deeply spiced with cardamom, fennel, and Kashmiri chili. One of India's most celebrated dishes, ready in about 90 minutes.

What Is Gosht Masala?

Gosht simply means "meat" in Hindi and Urdu. Gosht masala is the foundation of Kashmiri meat cooking — a slow-simmered curry where the spice blend does all the heavy lifting. Traditionally made with lamb or goat, it works beautifully with beef or bone-in chicken too.

Unlike quick-cook curries, gosht masala rewards patience. The low-and-slow simmer transforms tough cuts into fall-apart-tender meat with a sauce that's deeply concentrated and aromatic.

Ingredients

  • 2-3 lbs bone-in lamb leg or shoulder, cut into chunks
  • 1 packet moji masala® Rogan Josh Masala (closest blend for gosht)
  • 2 medium onions, thinly sliced
  • ½ cup plain yogurt
  • 3 tbsp cooking oil or ghee
  • ½ cup water
  • Salt to taste
  • Fresh cilantro for garnish

Step-by-Step Instructions

  1. Brown the meat: Heat oil in a heavy pot over medium-high heat. Brown the meat in batches — don't crowd the pan. Set aside.
  2. Cook onions: In the same pot, cook sliced onions until deep golden brown, about 8-10 minutes. This is the flavor base.
  3. Add spices: Add the moji masala® spice packet. Stir for 1 minute to bloom the spices.
  4. Add yogurt: Stir in yogurt one tablespoon at a time to prevent curdling.
  5. Return meat: Add the browned meat back. Add ½ cup water. Stir well.
  6. Slow simmer: Cover and cook on the lowest heat for 75-90 minutes until meat is fall-apart tender. Check occasionally and add water if needed.
  7. Finish: Garnish with fresh cilantro. The sauce should be thick and clinging to the meat.

Tips for Perfect Gosht

  • Use bone-in meat: Bones add richness and body to the sauce
  • Don't rush the browning: Good color on the meat = deeper flavor
  • Low and slow wins: The longer the simmer (within reason), the more tender the meat
  • Make it ahead: Gosht tastes better the next day as the spices meld overnight
  • Serve with: Steamed basmati rice and warm naan — the sauce is meant for soaking
