Gobi Masala is a pre-measured Indian spice blend for authentic cauliflower curry — roast it, stew it, or make classic aloo gobi with potatoes. One packet, one dish, serves 3–5.

What Is Gobi Masala?
Gobi means cauliflower in Hindi, and gobi masala is one of the most popular vegetarian dishes in Indian home cooking. The most famous version — aloo gobi — combines cauliflower and potatoes in a dry, spiced preparation that's a staple at every Indian dinner table.
moji masala® Gobi Masala is formulated specifically for cauliflower dishes, with a smoky, earthy spice blend that complements the vegetable's natural nuttiness.
How to Cook Gobi Masala
Ingredients
- 1 packet moji masala® Gobi Masala
- 1 medium head cauliflower, cut into florets
- 1 medium onion, diced
- 2 tomatoes, chopped
- 2 tbsp cooking oil or ghee
- 2 potatoes, cubed (optional — for aloo gobi)
- Fresh cilantro for garnish
Stovetop Method
- Sauté onions: Heat oil in a large pan. Cook onions until golden, about 5 minutes.
- Add spices: Add the moji masala® Gobi Masala packet. Stir 30 seconds to bloom.
- Add tomatoes: Cook until soft, about 3 minutes.
- Add cauliflower: Toss florets (and potatoes if using) in the spiced base. Add ¼ cup water.
- Cover and cook: Simmer on medium-low for 20–25 minutes until tender. Stir occasionally.
Roasted Method (crispier)
- Toss cauliflower florets with oil and the moji masala® packet.
- Spread on a baking sheet. Roast at 425°F for 25 minutes until edges are crispy and caramelized.
Flavor Profile
Smoky, earthy, and mildly spiced. The blend enhances cauliflower's natural flavor rather than masking it. Not spicy — kid-friendly and beginner-friendly.
Tips and Variations
- Crispy gobi: The roasted method gives restaurant-style crispy edges
- Add peas: Frozen peas stirred in during the last 5 minutes add color and sweetness
- Make it a wrap: Stuff spiced gobi into warm naan or tortillas
