Kitchari is an age-old one-pot dish of rice and mung bean that provides complete nutritional balance. Does your digestion need a break? Hit the reset button and enjoy this simple yet flavorful dish for breakfast, lunch and dinner for a couple of days. Short on time and want to eat a super healthy meal and use your leftover produce? Kitchari is calling you!
The dish thickens slightly once off heat, so prepare it slightly soupier than desired.
½ cup basmati rice
½ cup split mung bean
3 cups of water (3.5 cups for a soupier consistency)
1 tablespoon ghee or vegetable oil
1 packet MM Kitchari Masala
1 cup of vegetables of choice (optional)
1 teaspoon salt
1. Place rice and mung beans in a mixing bowl and rinse 2-3 times, until water runs clear.
2. Place a medium size pot over medium heat. After one minute add oil followed by contents of MM Kitchari Masala packet. Stir for 10 seconds.
3. Add rice and bean mixture, vegetables and salt and stir until well-coated with masala mixture.
4. Add water, turn heat to medium-high and bring to a boil. Lower heat to medium-low and cover for 30 minutes, or until rice and beans are tender. Stir occasionally so the kitchari doesn’t stick to the bottom of the pan.
To Reheat Leftovers: Blend water in to thin out the Kitchari and reheat on low heat.
