Use Moji's Kitchari recipe and full packet and recipe to make a delicious, healing pot of Kitchari, an age-old ayurvedic rice and mung bean dish. Prepare this quick and healthy vegan meal in about 40 minutes using your leftover produce. Or eat it exclusively for 3-7 days as a nutritious cleanse.

Ingredients

½ cup basmati rice

½ cup split mung bean

1 tablespoon ghee or vegetable oil

1 packet Moji Masala Kitchari Masala

1 cup of vegetables of choice (optional)

1 teaspoon salt

3 cups of water (3.5 cups for a soupier consistency)

Directions

Step 1  Place rice and mung beans in a mixing bowl and rinse 2-3 times, until water runs clear.

Step 2  Place a medium size pot over medium heat.  After one minute add oil followed by contents of MM Kitchari Masala packet.  Stir for 10 seconds.

Step 3  Add rice and bean mixture, vegetables and salt and stir until well-coated with masala mixture.

Step 4  Add water, turn heat to medium-high and bring to a boil.  Lower heat to medium-low and cover for 30 minutes, or until rice and beans are tender.  Stir occasionally so the kitchari doesn’t stick to the bottom of the pan.

To Reheat Leftovers: Blend water in to thin out the Kitchari and reheat on low heat.
